Grilled Vegetables and Chicken Sausage
Crimini mushrooms
Green and Red Bell Peppers
White or Red Onion
Mexican squash (Zucchini or Yellow Squash work)
Fennel
Jalapeno
Chicken sausage
Soak wooden skewers so they don't burn.
Light drizzle of Olive oil on all the veggies and light season (no dried herbs they burn)
Assemble and throw over lump charcoal, rotating from the hottest part of the grill to the coolest while cooking evenly till there is a light char and all veggies are cooked thoroughly
I also liked to cook some potatoes for a carb to complete the dish
